Presence of nisin-producing streptococci in milk for Grana cheese manufacture and their influence on the milk's microflora

The activity of nisin-producing bacteria both in milk and starters was evaluated. 80000-160000 nisin-producing streptococci were found in milk, whereas starters contained nisin-sensitive strains of Lacto-bacillus helveticus, L. jugurti, L. bulgaricus, L. lactis, L.fermenti, and L. acidophilus, the first 2 spp.being predominant and also very nisin-sensitive.
