Use of nisin in the manufacture of evaporated milk

The use of nisin was studied in the manufacture of evaporated milk in tubes at 3 Soviet dairy plants. Addition of 100 RU/g ensured the sterility of the product when the final heat treatment was carried out at 115 deg C with 10 min holding at 112 deg C with 20 min holding. Compared with the controls sterilized at 117-118 deg C with 17-20 min holding, the products with nisin had lower acidity and viscosity, somewhat higher contents of P, Na and whey proteins and showed better retention of vitamin A, thiamin, riboflavin and ascorbic acid. The sterilization efficiency was not affected by the TS content (26 or 31-32%) of the milk.
