Information is given on the use of various materials for the precipitation of whey proteins, including carboxymethyl-cellulose (protein recovery about 69%, the product containing about 60% protein and 1.7% ash), ferric chloride (89%, 79% and 18%), ferric polyphosphate (92%, 70% and 28%), polyacrylic acid (63%, 82% and 13%), and sodium hexametaphosphate (76%, 84% and 13%). The high ash contents can be reduced by subsequent filtration on Sephadex G 25 to below 5%.
