Electrodialysis can be used either to remove ions from whey (electrodialytic demineralization), or to alter the ionic composition of milk (electrodialytic metathesis). Electrodialysed milk can be used in cheesemaking and for condensing. The membranes used consist of ion exchange resins reinforced with synthetic fabrics. Both methods are described and discussed with relevant diagrams. The velocity of Ca removal depends upon the pH of milk.
