Use of a screen-bowl centrifuge for dewatering casein curd

Casein curd was dewatered in a pilot-scale screen-bowl (basket) centrifuge (Conturbex model H250, Siebtechnik, Germany) at a flow rate of 3500 litres/h and temp. ranging from 34 to 40 degrees C. Moisture content varied from 56 to 51% (wet basis) with increase in feed temp., and the dewatered curd was, in general, more friable and dried more readily than that dewatered by decanter (horizontal solid-bowl centrifuge).
